How to Make Authentic African Fufu (Step-by-Step Guide)

by Louise Panton

Introduction:

Fufu is a staple in West African cuisine, known for its soft, stretchy texture and perfect pairing with soups like cassava leaf, pepper soup, or palm butter. Whether made from cassava, plantains, or yams, fufu brings home the comforting taste of Africa.

Ingredients:

  • 2 cups fufu flour (or plantain flour, cassava flour, or yam powder)

  • 3 cups water

  • A wooden spatula (for stirring)

  • Bowl of cold water for shaping

Instructions:

  1. Boil 2 cups of water in a pot.

  2. Mix 1 cup of water with the fufu flour in a separate bowl until smooth.

  3. Slowly pour the flour mixture into the boiling water while stirring continuously with the wooden spatula.

  4. Reduce heat and keep stirring until the mixture thickens and forms a smooth, stretchy dough.

  5. Scoop out, shape into balls using cold water, and serve hot with your favorite soup or stew.
